9-29 taco bake leftovers ftw!

today’s lunch is leftover taco bake. that’s really just our name for it, taken as the idea was from pre-packaged bakes of the same name by people like el paso, etc. it’s simple, easy, and yummy. just make taco meat as you normally do (we used chicken, but any ground meat works, of course), then layer it between tortillas (these are wheat) with cheese, salsa, and whatever other toppings you like on your tacos. top it with an extra layer of cheese and salsa and bake it in the oven at 350°F for 15 minutes or until the cheese is melted and everything is crispy and warm. then, you’re done! i like to serve mine with shredded lettuce, a bit of sour cream, and more salsa, but that’s just extra stuff.

i had the pear for dessert.

work is still crazy busy, but i think it’s less insane than the end of last week was. i feel like i’m finally getting things done instead of continually hammering the same nail into place. it’s nice to have more of a sense of accomplishment as opposed to an endless list of incompleteness. too bad it’s only tuesday, however.
